On Tuesday, February 2 at 6:30 p.m. AIMEE will prepare some CHOCOLATE ENTRÉES ($48
per person). This is a new and exciting class which features three different main dishes, all made with either cocoa or chocolate. We’ll enjoy a Mocha Pot Roast, which has cocoa and coffee in the rich gravy, served with roasted potatoes and grilled Romaine lettuce hearts. Our Flank Steak will be rubbed with a mixture of cocoa powder, hickory smoked sea salt and ground dried mushrooms, then broiled and served with a Mushroom Salad with Fresh Sage. In a slightly more traditional vein, we’ll enjoy Seared Turkey Breast Steaks with Chocolate Molé made with chocolate, mild chiles and aromatic spices. This will be a great class for those of you looking for something really different, and really tasty!

AIMEE BLUME teaches pastry classes at IVY TECH and writes for the Evansville Courier & Press, but what she really enjoys is teaching in our school. A graduate of Western Culinary Institute, she has cooked in several locations around the country, most notably in New Orleans at Susan Spicer’s Bayona restaurant.
