On Tuesday, October 4 at 6:30 p.m. MONIQUE will be preparing SOUFFLÉS, SWEET & SAVORY. Madam tells us that no celebration, and certainly not a 25th anniversary celebration, is complete without this French classic. To prove it, MONIQUE will prepare a Spinach & Cheese Soufflé, a Lobster Soufflé, a Lemon Soufflé, and of course a Chocolate Soufflé. We’ll learn the chemistry and techniques for making perfect soufflés every time. And we will celebrate together!!

MONIQUE HOOKER is one of our favorite people, a terific cook and the author of Cooking with the Seasons; A Year in my Kitchen. A native of Brittany, France, MONIQUE has taught at Kendall College in Chicago and at the Culinary and Hospitality Institute of Chicago. She's probably trained more Chefs than we've had students in our classes.
