LELIA GENTLE and husband Stan own Stan’s Fish Sandwich in Louisville. Lelia loves to teach, has been teaching for many years and I don’t know anyone who lives “inland” who knows more about seafood. On this schedule, Lelia is repeating one class which always sells out, and offering a new class which we are sure will, too.

On Tuesday, April 15 at 6:30 p.m. Lelia will repeat her Big-Time Sushi Class ($65), ably assisted by Sheri Drabin. She will include instruction in making Sushi Rice, Hoso Maki (including both inside and outside rice rolls), Futo Maki, which are large multi-fish rolls, Gunkans or sushi “boats,” and Nigiri Sushi. Only one recipe features raw fish, all the other fish and seafood items will be cooked. This class will involve hands-on participation and you will make your own “inside” and “outside” rolls. You will also take home your own sushi mat, to make sushi at home. If you want to understand how sushi is made, why it is so popular around the world and why it is expensive (this class is really a bargain sushi dinner), then don’t wait to sign up. It sells out every time it’s offered.

On Tuesday, June 9 at 6:30 p.m. Lelia returns to showcase some Spectacular Seafood Salads ($48). Here are three terrific party dishes for summer entertaining. We’ll have a Shrimp Cobb Salad, served with three home-made dressings, a Salade Tuna Niçoise in a Dijon Vinaigrette, and a Glazed Salmon served over a Carrot-Beet Salad which is just marvelously pretty, and just as tasty, too! All can be made ahead and taken out of the refrigerator just in time to serve your guests on the deck or patio. (It’s OK to serve them inside, too!)

As we have done previously, we have arranged with Lelia for you to order fish and/or seafood through the auspices of Stan’s Seafood Restaurant, which she will bring fresh on the day of class. You can pick up your fish order between 4:30 and 6:00 p.m. the day of class. Out-of-towners and those taking the class will be able to get their orders after class.
