MIKE SACKETT doesn’t teach too many classes. He teaches a couple in tandem with wife, Shelly, but has one class he offers every summer, for the last 20 summers. It almost always sells out, so he keeps teaching it. Those who have taken his class use his recipes for years afterward, and hopefully, some of the general information he imparts as well.
On Saturday, June 28 at 9:30 a.m. Mike will prepare Seven Summer Salads ($48). We’ll start with homemade mayonnaise, and talk about various types of salad dressings, then enjoy seven truly unique recipes, including: Tuna Salad Fosshur, Wonderfull Potato Salad, Chicken-Orange-Walnut Salad, along with a Steak and Radish Salad, an Oriental Shrimp Salad, a Seafood Salad with Avocado, and more. I should warn you that I usually teach this class on the week-end because it takes a full 3-hours to do everything in the class, but it’s been very rare for anyone to leave early, or to leave hungry, even though all they’ve eaten is salads. I’m a big believer in changing and adapting recipes, and I’ll give you some guidelines on doing so in this class.
